Probably the easiest kit build in the world. you will need to purchase a Yamaha R1 98-06 work best. The parts you will need is the complete engine including ancillaries , rear swing arm and rear wheel including the rear brake. wiring loom, handle bars switched and ignition. All the other parts can be sold to recover about 50% of the bike purchase.
